HCG Approved Healthy Meringue Cookies
- 3 egg whites (be sure they are at room temperature)
- 2 tablespoons Stevia
- ¼ teaspoon Cream of Tartar
- ½ teaspoon Vanilla Extract
Line a cookie sheet with parchment paper. Preheat oven to 225 degrees. In a bowl, whip egg whites for 5 minutes or until they start to stiffen. While beating the egg whites, slowly add in the Stevia. Make sure you do this gradually. Repeat this slow mixing process with the cream of tartar and the vanilla extract until all ingredients are combined. Dollop the mixture onto lined cookie sheet. Divide into 12-18 cookies depending on size preference. Bake for 50-55 minutes making sure you keep a close eye on them for the last 5 minutes so they don’t burn. The tops will start to brown. After about 55 minutes, turn the oven off and leave the cookies in for 30 minutes to an hour with the oven door slightly cracked.
