Soup is the ultimate comfort food, but often times the soup you find at restaurants is full of unnecessary, calorie dense ingredients like butter, cream, and cornstarch. Cutting down calories in soup is simple. Stick with low-fat, low-sodium broth and use vegetables as the base instead of cream. You can still make a filling, delicious comfort food without additional calories. Here’s a Chicken Cauliflower soup recipe that is absolutely delicious. Not only is the chicken a good source of protein, but the cauliflower creates a nice thick texture so you feel like you’re eating a cream based soup.
– 3.5 oz ground chicken breast
– 1 cup fat-free, low-sodium Chicken broth
– 2 cups cauliflower
– 1 tbsp garlic powder
– 2 tbsp raw onion chopped
– Black pepper, to taste
In a non stick sauce pan saute chicken, onion and spices. until chicken is no longer pink and onion is transparent. Add Broth. simmer Steam cauliflower until soft. In a blender puree cauliflower and add it to the chicken and broth.
Counts as: 1 protein, 1 vegetable
This recipe is very versatile if as far as seasonings go. If you’re looking to add more flavor, try experimenting with fresh herbs like basil or rosemary.
