This HCG Phase 2 curry chicken salad recipe is perfect to take to picnics this summer. It has incredible flavor and you can add it to a salad, or put it on bread for your friends who aren’t on the HCG Diet. Try it out and let us know what you think!
– 100 grams diced chicken
– 1 apple, diced
– Celery, diced
– ¼ c. water
– 2 tablespoons lemon juice
– 1 tablespoon finely minced onion
– 1 clove of garlic crushed and minced
– ¼ teaspoon curry powder
– Dash of garlic powder
– Dash of onion powder
– Dash of cayenne pepper
– Dash of cinnamon
– Dash of turmeric
– Trulicious Stevia to taste
In a small pan, sauté chicken in lemon juice until it’s lightly browned. Add ¼ cup water and spices. Stir well and simmer over low heat until liquid reduces and forms a sauce. Add water as needed to produce desired consistency. Chill chicken and curry mixture. Once chilled, add in chopped apple and celery.
Counts as 1 protein serving, 1 vegetable serving, and 1 fruit serving.
