Chicken salad cucumber cups are a favorite during the summer time. If you’re looking for meal ideas that don’t use the stove, stick to the HCG Diet, AND use some of those garden goodies you’ve been picking.
- 1 large cucumber
- 4 oz of cooked chicken, shredded or cut small
- 1/2 tomato, diced
- Fresh cilantro, chopped
- Garlic powder to taste
- Onion powder to taste
- paprika to taste
- Frank’s Red Hot Hot Sauce (optional)
Directions: Peel your cucumber and cut it into 4 equal sections. Use a melon baller or spoon to remove the pulp halfway through each cup. Do not scoop all the way through. In a small bowl, combine chicken, tomato, cilantro, seasonings and hot sauce. Scoop mixture into cucumber cups and enjoy! This recipe counts as 1 veggie serving, 1 protein serving. If you’re on Phase 3 of the HCG Diet, you can try adding cottage cheese to your chicken salad mixture! It makes the meal heartier and adds calcium!
